Guest Chef Introduction for a Les Marmitons of Keowee Cooking Event
Les Marmitons is an international gastronomic and social club of gentlemen who share a common interest in fine food, wine and the culinary arts. Through regular gatherings, members gain knowledge and experience in the preparation
and presentation of various fine cuisines under the direction of a professional Guest Chef.
From September through May, Les Marmitons of Keowee meets once a
month under the direction of a Guest Chef. The Guest Chef collaborates with
club members to decide on a 4 or 5 course menu and provides recipes to guide the event.
The Guest Chef, at our Cooking Event, will “coach” the Les Marmitons teams in the dinner preparation.
Initially six of our members would come to your restaurant (at our expense)
about 6 weeks before our Cooking Event for a “tasting” of dishes you propose.
Each course can be something from your restaurant’s menu, your old favorite, or something new you’d like to try. We like to finalize the menu by 3 weeks in advance to start the sign-up process for the event. Our Sommelier also uses the
menu to begin the wine selection process. It is important to get the recipes to your LMOK contact at least 2 weeks in advance in order for us to prepare
shopping lists, send the recipes out to the signed-up members, and aide our
Sommelier in finalizing his wine selections. Recipes could be scaled for
servings of 4, 8 or 32, but we will work with any serving number. We prefer
menus where all of the dishes can be prepared in the kitchen the day of the Cooking Event, in order to keep our members fully engaged. The course
portions should be viewed more as a modified small plate menu, rather than a regular meal. We are looking for quality, presentation, and a learning experience for our members.
Les Marmitons of Keowee normally meets at The Club of Keowee Key in
Salem, South Carolina. This kitchen is fully equipped with nearly every item
needed in a high-end restaurant available for our use. If any special tools are needed, the Guest Chef should let us know so we can make sure the requested item will be available.
We generally serve about 30 plates to LMOK members & guests, and to our
Guest Chef. Our target budget is $30 for food ingredients and $25 for wine per
person. We have a team that does all the shopping, yet would appreciate it if
our Guest Chef would bring hard to find and/or very small quantity ingredients.
Our event begins at 4:00pm with
introductions, followed by the Guest Chef’s cooking instructions to our Team Captains. Our target is to have the first course on the
table by 6:00 with a steady progression of a course every 20-30 minutes thereafter. After each course is completed, each Team
Captain will discuss the preparation, followed by your critique. We target to end the evening by 9:00 pm.
LMOK members will be wearing a Les Marmitons uniform of chef coats, aprons and hats. Chef, you can expect a high level of interest, basic knife & cooking skills, desire to follow recipes, and excellent team cooperation. Past Chefs tell us this is the most enjoyable evening they’ve had in a kitchen all year.
A few weeks following our Cooking Event we’d like to return to your restaurant with some of our spouses & guests as our “thank you” for cooking
with us.
